The Best Vegan Reuben Sandwich!

Being that it is currently Veganuary (if you don’t know what that means, it’s when some people choose to go vegan for the month of January), I wanted to kick off the month with a delicious vegan lunch recipe for you guys!! Therefore, I decided to make a vegan version of one of my favorite classic sandwiches – the reuben!!!

I have always been OBSESSED with reuben sandwiches! I grew up in northern New Jersey where they were quite popular. I remember growing up as a kid I’d go with my grandparents to a deli near them that served the BEST reuben sandwich! I’m so thrilled to say that I was able to recreate a healthy vegan version of this delicious sandwich!

This sandwich is made with the following ingredients:

  • Sprouted rye bread
  • Sauerkraut: I love that crunch that this adds to the sandwich and sauerkraut is also an amazing source of probiotics.
  • Vegan thousand island dressing OR vegan Russian dressing. I found both options in the dressing aisle at Whole Foods Market, or you can make your own. Pinterest has so many vegan dressing recipes! If making your own dressing I recommend using a healthier oil like avocado oil or olive oil and sticking to natural sweeteners like maple syrup.
  • Tempeh (a great source of plant-based protein). This is what I substitute for the meat.
  • Violife Just Like Smoked Provolone Slices: this is an incredible alternative for dairy-free cheese! All of their cheeses are 100% vegan, dairy free, gluten free, non-GMO and free from major allergens. It melted PERFECTLY in the sandwich!!

How to make this delicious vegan reuben sandwich:

  1. Heat up a frying pan over medium heat with oil (I recommend avocado oil or olive oil). Cook the tempeh for about 5 minutes per side, then remove from heat and set aside.
  2. Spread the thousand island or Russian dressing over both slices of rye bread. Then layer on the tempeh, sauerkraut and Violife Just Like Smoked Provolone Slices.
  3. Heat up a panini maker and place the sandwich in the panini maker, pressing it down. Cook for about 3 – 5 minutes depending on the heat of your panini maker and until the cheese is perfectly melted. Cut in half and enjoy! If you don’t have a panini maker you can cook this in the oven or toaster oven, but I highly recommend a panini maker for best results 🙂

If you’re looking for an amazing vegan cheese option for this sandwich, then I highly recommend Violife! Their vegan cheeses are delicious and indulgent, and get so melty (but vegan!)  I love that their products are based on coconut oil and contain B12.

Vegan Reuben Sandwich

This delicious vegan reuben sandwich tastes like the real deal, but is meat-free and dairy-free!

Ingredients

Scale
  • 2 slices of rye bread
  • 1 slice Violife Just Like Smoked Provolone Slices
  • 3 tbsp sauerkraut
  • 4 tbsp vegan thousand island dressing or vegan Russian dressing
  • 1/4 inch slice of tempeh

Creamy chia pudding with all the toppings - love t Creamy chia pudding with all the toppings - love this for a satisfying breakfast! Chia seeds are packed with fiber and most of us don’t get enough fiber in our diets...

To make the chia pudding: in a blender add 1 cup almond milk, 1/4 cup chia seeds & 1/2 ripe banana (the banana is optional, but I love that it naturally sweetens it & makes it nice and creamy. Blend then pour into a jar and refrigerate overnight (or for at least an hour). Add desired toppings. I love fresh berries, grain-free granola & hemp seeds. Love some almond butter drizzled on top too!

Officially one of my new fave smoothies!! This blu Officially one of my new fave smoothies!! This blueberry zucchini almond butter shake is such a great way to get some veggies in! Thank you for this recipe @flora_and_vino 

1.5 cups almond milk
1 tbsp ground flax
1 tbsp almond butter 
1 scoop vanilla protein (can use vegan protein or vanilla collagen).
1 cup frozen blueberries 
1 frozen zucchini (I steam it first, let it cool, then chop it & freeze it).

I remember about two years ago I had a cough that I remember about two years ago I had a cough that was lingering so I went to a doctor that I had never been to before just to get checked out and make sure everything was okay. Peanut butter & banana French toast roll ups!!! De Peanut butter & banana French toast roll ups!!! Def a big hit w the girls!! 

First cut the crust off the bread (I used sprouted organic whole wheat) and then flatten with a rolling pin. Spread a layer of peanut butter over the bread, followed by thinly sliced banana (the banana just covering 1/4 of the bread), then roll up. Dip the entire rollup in egg & almond milk mixture (1 egg, 2 tbsp almond milk, cinnamon & 1/2 tsp vanilla extract). Cook on a frying pan over medium heat in coconut oil (or grass-fed butter). I heat up the frying pan a few min before placing the rollup on it. Cook for 2 - 3 min on each side. Drizzle some peanut butter on top & ENJOY! 

It’s a beautifullllll day here in South Florida, so planning to spend the rest of the day outside w the girls & Josh. Putting my phone away & being present in what’s REALLY important (which is the people you’re spending time with in REAL life), not scrolling mindlessly on social media - something I’m really working on! 🤍
