I love that peaches are now in season – they scream all things summer! I recently bought dozens of peaches from my local farmer’s market and am dreaming of all the amazing recipes I’m going to make with them: peach cobbler, peach pie, peach ice cream…
Then, The Greek God’s Yogurt was kind enough to send me their new yogurt to try. One of the flavors was chia peach (fat free greek yogurt with a chia seed peach mixture at the bottom). I was so excited to use this yogurt in one of my recipes with my fresh peaches! I was also thrilled that the yogurt is gluten free, high in calcium and has 12 grams of protein.
I decided to make a parfait consisting of oatmeal, yogurt and peaches. When you mix all these ingredients together is is HEAVEN! The combination is really amazing. The best part about this is you can make a big batch and keep it refrigerated – such a perfect grab-and-go meal!
The parfait is SO simple to make. For the oatmeal portion of the parfait, you simply combine the oats, cinnamon, vanilla and almond milk in a pot and cook for 5 minutes over the stovetop. You then simply pour the oatmeal mixture into a glass, followed by the yogurt and top it with some sliced peaches and an optional drizzle of almond butter. I love almond butter on top every everything, as I feel it adds amazing flavor!

Peachy Oat Yogurt Parfait
- Add the oats, cinnamon, vanilla extract and almond milk to a small pot over the stovetop. Bring to a boil, then reduce heat and cook on low for 5 minutes, or until most of the liquid has been absorbed.
- Now make the parfait by pouring the oatmeal into a jar, followed by the yogurt then the peaches and a drizzle of almond butter. Enjoy!
