Combine all ingredients in a food processor and pulse until it forms into a dough.
Using an ice cream scooper scoop out onto a parchment-lined baking tray.
Place in the fridge for at least an hour to harden a bit and then keep stored in the fridge in an airtight container for up to a week OR freeze and just defrost one prior to eating!
