This is the best vegan kale pesto I have ever tasted!
I am a big fan of pesto, and have almost always preferred it on my pasta instead of tomato sauce. The problem is, store-bought pesto often has preservatives and other unhealthy ingredients. I made a dairy-free pesto for anyone who is vegan, has a lactose intolerance or wants to cut back on their dairy consumption. This pesto is paleo and gluten-free as well.
I always try to sneak extra nutrients into all my recipes, so I added kale (but you would never know it’s in there). I used walnuts in addition to traditional pine nuts as they are loaded with vitamins, folate and omega 3 fatty acids and thus support heart and brain health. If you do prefer cheese in your pesto and aren’t vegan, feel free to add a handful of shredded parmesan – this recipe is delicious either way!

Vegan Kale Pesto
Yield 4 servings
A vegan pesto made with superfoods such as kale and walnuts!
- 2 cups kale
- ¼ cup basil
- 2 tbsp parsley
- 1 garlic clove
- Squeeze of fresh lemon
- 1/3 cup walnuts
- ¼ cup pine nuts
- Pinch of pink sea salt and pepper
- 3 tbsp olive oil
- Place all ingredients into a food processor and process until smooth; about one minute.
- Enjoy over your favorite pasta (I prefer brown rice or Ezekiel sprouted-grain pasta.) I also use this pesto as a spread on toast or as a dip.
