As a kid I think I asked my mother to make me mac n cheese for dinner every night – I couldn’t get enough of it! As a teenager I would come home from parties at midnight and make myself a huge bowl of mac n cheese (I know – I was sooooo healthy)!
In my mature, healthy adult life I still like mac n cheese, just a MUCH healthier version! This version is vegan and gluten-free and every ingredient is nutritious. I used Modern Table lentil pasta, which tastes like real pasta, but is made with just lentils! They are packed with 14g of protein per serving and I love that they ensure the lentils are non-gmo too! As you may be aware, lentils don’t contain any gluten either 🙂
The healthy ‘cheese’ sauce is made with sweet potato, cashews, nutritional yeast, lemon juice, almond milk, chili powder, pink sea salt and pepper.

Vegan & Gluten-Free Mac N Cheese
- Prep Time: 20 minutes
- Cook Time: 10 minutes
- Add all ingredients (except the pasta) into a high speed blender or food processor and blend until smooth. If the sauce is too thick add a little more almond milk.
- Prepare pasta according to the instructions on the package.
- Pour sauce over the pasta and mix well. Enjoy!
