Sweet Potato Noodles with a Honey Almond Butter Sauce

  1. Spiralize the sweet potato into noodles by using a spiralizer, or a peeler if you do not have one. I bake the sweet potatoes for 5 minutes to soften them if they are too hard to spirailze.
  2. Add 2 tablespoons of olive oil to a large pan and heat over medium heat. Add the sweet potato noodles and cook for about 10 – 15 minutes, stirring occasionally.
  3. Meanwhile, prepare the honey almond butter sauce by combining the almond butter, honey, olive oil, salt and pepper in a small jar or bowl.
  4. When the noodles are finished cooking (they should be soft enough to eat and have a very lightly fried look to them), pour the sauce over the noodles (you may not need to use all of the sauce). Stir until the noodles are well-coated with the sauce, adding more if necessary.
  5. Serve the noodles in a bowl or plate. I like to add roasted broccoli as a nice side; and if I’m extra hungry I’ll top the noodles with a veggie burger!
