Paleo Sriracha Ginger Cauliflower Kraut Fried Rice

Ingredients

Scale
  • 12 tbsp sesame oil
  • 3 cups riced cauliflower
  • 1 tbsp freshly chopped ginger
  • 1 garlic clove
  • 1/4 cup diced onion
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 cup diced zucchini
  • 1 tbsp coconut aminos
  • 2 eggs, scrambled in a bowl
  • 3 tbsp Farmhouse Culture Sriracha-Ginger Kraut
  • Pinch of pink salt and pepper

Toppings:

  • Fried egg
  • Black sesame seeds

Instructions

    1. Add the sesame oil to a large skillet or frying pan over medium heat.
    2. Add in the onion and cook for about 3 minutes.
    3. Add in the garlic, ginger, cauliflower rice, carrots, peas, zucchini and coconut aminos. Stir and cook until vegetables are almost fully cooked, but not too soft.
    4. Add in the scrambled eggs and stir until cooked through and combined with the rest of the ingredients in the pan – about 3 minutes.
    5. Add in the Sriracha-Ginger Kraut, salt and pepper and cook for 5 more minutes over low heat.
    6. Pour into bowls, top with a fried egg and black sesame seeds (optional). Enjoy!
