Paleo Pecan Waffles

I’m a big waffle lover and always enjoy creating recipes with different add-ins and toppings. Today I made these paleo pecan waffles and they are incredible! I love the crunch that the pecans add both in the batter and scattered on top. I love the rich, buttery texture and naturally sweet taste of pecans.

Paleo Pecan Waffles

These waffles are made with clean, simple and minimal ingredients. This recipe is dairy-free, gluten/grain-free and is free of refined sugar.

As obsessed with the waffles as I am, I’m equally obsessed with the pecan praline sauce. It’s my healthier version of a praline sauce and it’s SO good! I made a big batch so I had leftover sauce to use throughout the week. In addition to making these waffles again, this sauce would also be so delicious drizzled over oatmeal or yogurt!

Paleo Pecan Waffles

As mentioned, I’m obsessed with the addition of pecans in this recipe – they’re truly the star of the show. Here’s why:

Pecans are nutrient dense. They are high in “good” monounsaturated fats, and provide plant protein, fiber, flavonoids and essential minerals, including copper, manganese and zinc. As mentioned, pecans are a good source of filling dietary fiber, and compared to other tree nuts, pecans are among the lowest in carbs (4 grams) and highest in dietary fiber (3 grams) per serving. Pecans also contain 0 cholesterol or sodium and are gluten-free.

I love how versatile pecans are. They’re an easy snack – I love eating a handful of them to hold me over until my next meal. Since pecans are a good source of protein, ‘good’ fat and fiber they can help you stay fuller longer, making them an ideal snack. I also love adding them in my oatmeal, yogurt and salads. I’m also a huge lover of pecan pie – so that’s definitely one of my favorite uses for them 🙂

Fun fact: of all the major tree nuts eaten in the U.S., pecans are the only ones indigenous to America. Once grown wild and enjoyed by Native Americans, pecans are now harvested in over a dozen Southern states.

Paleo Pecan Waffles

Ingredients

For the waffles:

  • 2 eggs
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch of salt
  • ¼ cup pecan halves
  • Coconut oil cooking spray

For the pecan praline sauce:

  • 1/2 cup coconut milk
  • 1/2 cup coconut cream
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp pink sea salt
  • ¼ cup pecan halves

Instructions

To make the waffles:

  1. Mix the wet ingredients (eggs, maple syrup & vanilla extract) together in a large bowl.
  2. Mix the dry ingredients together in a bowl, then pour into the bowl with the wet ingredients, mixing until everything is well combined.
  3. Pour in the pecan halves and mix again.
  4. Heat a waffle maker and spray with coconut oil cooking spray.
  5. Add about 1/4 cup of batter onto the hot waffle maker and cook until browned, about 5 minutes, then top with the pecan praline sauce.

To make the pecan praline sauce:

  1. Place all ingredients except for the pecan halves in a small sauce pan over low heat, stirring to dissolve the coconut sugar.
  2. Once mixture is boiling, reduce to a simmer and simmer for 10 minutes, stirring occasionally.
  3. Pour the pecan halves into the sauce once it’s done cooking and mix again.
  4. Pour the sauce over the waffles, and pour the remaining sauce into a jar and keep refrigerated for up 5 days.
