Healthy Smash Cake

A healthy vegan, gluten-free, dairy-free & egg-free smash cake that is perfect for your baby’s first birthday! This cake is naturally-sweetened with just banana and applesauce and is packed with healthy fat.

Instructions

  1. Preheat oven to 375F.
  2. In a large bowl, combine the coconut flour, oat flour, baking soda and cinnamon.
  3. In a separate bowl combine the mashed bananas, applesauce, oil and vanilla extract.
  4. Lightly grease a 9 inch cake pan with coconut oil and spread the batter into the pan.
  5. Bake for approximately 30 minutes, or until a toothpick comes out clean.
  6. Remove the cake from the oven and frost the cake. I used Simple Mills organic vanilla frosting and natural sprinkles
