I love a good cobb salad for lunch! This is definitely one of my go-to lunches throughout the week. I prep this ahead of time so all of the ingredients are ready to go in my fridge when I’m ready to make this salad. I always grill lots of chicken on Sunday nights so it’s ready to go throughout the week. There’s no way I have time to cook chicken while making a weekday lunch! I also hard-boil the eggs the night before.

This salad is easy to throw together and makes for a delicious and healthy lunch. I love that it’s packed with high-quality protein (organic chicken, organic bacon and pasture-raised eggs), healthy fat (avocado and the dressing), and fiber (vegetables). This healthy cobb salad is paleo-friendly, grain-free, gluten-free and dairy-free. You’re going to love it!

Ingredients needed for this cobb salad:

  • chopped romaine lettuce: I always opt for organic greens whenever possible.
  • pasture-raised hard-boiled eggs, thinly sliced: organic, pasture-raised eggs is the best choice health-wise. I boil the eggs the night before so they’re ready to go in the fridge when making this salad.
  • cherry tomatoes, sliced in half: I used heirloom cherry tomatoes, but any tomato works!
  • organic pasture-raised bacon: baked in the oven or fried in avocado oil or ghee.
  • avocado, sliced: I love the addition of avocado in any salad and it’s packed with healthy fat.
  • cooked organic chicken: you may use chicken breast or chicken thighs. I love to grill lots of chicken on a Sunday night and then use it throughout the week so it’s cooked and ready to go. I definitely don’t have time to cook chicken while putting together a weekday lunch, so I highly suggest making this ahead of time!
  • 2 tbsp paleo ranch dressing

  • 2 cups chopped romaine lettuce
  • 2 pasture-raised hard-boiled eggs, thinly sliced
  • 1/3 cup cherry tomatoes, sliced in half
  • 1 slice of organic pasture-raised bacon (cooked in avocado oil or ghee)
  • 1/2 avocado, sliced
  • 1/2 cup cooked organic chicken
  • 2 tbsp paleo ranch dressing


  1. Add all ingredients to a large bowl or plate, starting with the lettuce and ending with the dressing. Enjoy!
