Grilled peaches served with a vegan sea salt caramel sauce is the most DELICIOUS combo!

Every night after dinner I crave something sweet. I usually have a piece or two of dark chocolate, but lately I’ve been opting for something ‘fruity’. Since it’s summertime we’ve been grilling outside almost every weekend, so this time I decided to throw some peaches on the grill after dinner. When peaches (or any fruit) is cooked it naturally caramelizes the fruit and helps to enhance the natural sweetness of the fruit. This recipe would also be amazing with nectarines or apricots!

These grilled peaches are sweet all on their own, but I decided to serve them with some homemade vegan pink salt caramel sauce. The pink salt caramel sauce is so easy to make. It requires minimal and clean ingredients (ones you usually have sitting around your house) and took me under five minutes to make. The simple and healthy ingredients for this sauce are almond butter (can also use cashew butter), maple syrup and Frontier Co-Op Himalayan pink fine grind salt. I find that the pink salt really helps to bring out the flavor in the caramel sauce as well as in the peaches.

You can use any salt, but my brand of choice is Frontier Co-Op because they source their spices from growers committed to quality, sustainability and ethical trade. Their products are non-gmo and are free of ETO (ethylene oxide) which is a sterilization chemical commonly used in the spice industry. I also truly love the amazing flavor of their new Himalayan pink salt.

You can drizzle the pink salt caramel sauce on top of the peaches or serve it on the side and dip the peaches in the sauce. Either way, it’s absolutely delicious and will become one of your new favorite light and healthy desserts!

Ingredients

For the grilled peaches:

  • 3 ripe peaches
  • 1 tbsp melted coconut oil

For the sea salt caramel sauce:

  • 2 tbsp almond butter
  • 3 tbsp maple syrup
  • pinch of Frontier Coop pink sea salt
  • 1 tsp water

Instructions

  1. Heat your grill to low-medium heat.
  2. Slice the peaches in half and remove the pits. Brush the peach halves with coconut oil or coconut oil spray.
  3. Transfer face-down to the grill and cook for about 1o minutes.
  4. While the peaches are grilling make the caramel sauce by combining the almond butter, maple syrup, pink salt and water. If it’s too thick add a little more water to thin it out.
  5. Transfer the peaches to a plate and drizzle the caramel sauce over the top of the peaches. Serve immediately. 

Notes

This would be SOO delicious served with yogurt or ice cream!

Creamy chia pudding with all the toppings - love t Creamy chia pudding with all the toppings - love this for a satisfying breakfast! Chia seeds are packed with fiber and most of us don’t get enough fiber in our diets...

To make the chia pudding: in a blender add 1 cup almond milk, 1/4 cup chia seeds & 1/2 ripe banana (the banana is optional, but I love that it naturally sweetens it & makes it nice and creamy. Blend then pour into a jar and refrigerate overnight (or for at least an hour). Add desired toppings. I love fresh berries, grain-free granola & hemp seeds. Love some almond butter drizzled on top too!

1.5 cups almond milk
1 tbsp ground flax
1 tbsp almond butter 
1 scoop vanilla protein (can use vegan protein or vanilla collagen).
1 cup frozen blueberries 
1 frozen zucchini (I steam it first, let it cool, then chop it & freeze it).

I remember about two years ago I had a cough that I remember about two years ago I had a cough that was lingering so I went to a doctor that I had never been to before just to get checked out and make sure everything was okay. Peanut butter & banana French toast roll ups!!! De Peanut butter & banana French toast roll ups!!! Def a big hit w the girls!! 

First cut the crust off the bread (I used sprouted organic whole wheat) and then flatten with a rolling pin. Spread a layer of peanut butter over the bread, followed by thinly sliced banana (the banana just covering 1/4 of the bread), then roll up. Dip the entire rollup in egg & almond milk mixture (1 egg, 2 tbsp almond milk, cinnamon & 1/2 tsp vanilla extract). Cook on a frying pan over medium heat in coconut oil (or grass-fed butter). I heat up the frying pan a few min before placing the rollup on it. Cook for 2 - 3 min on each side. Drizzle some peanut butter on top & ENJOY! 

It’s a beautifullllll day here in South Florida, so planning to spend the rest of the day outside w the girls & Josh. Putting my phone away & being present in what’s REALLY important (which is the people you’re spending time with in REAL life), not scrolling mindlessly on social media - something I’m really working on! 🤍
