Ever since quarantine began mid-March I have been on a major baking kick!! I’ve been baking everything – cookies, brownies, banana bread – but have been trying to make healthy versions of all my favorites!! Out of everything I bake I always find myself coming back to banana bread. It’s been a favorite of mine since I was a kid and enjoying a slice of it always makes me so happy! I swear I always have to have a freshly baked loaf of banana bread sitting on my kitchen counter at all times. As soon as I’m down to the last slice I bake another loaf.

I’ve been playing around with all different kinds of banana bread lately like my vegan chocolate chip banana bread bites. Those were soo good! This time I went a different route and made this paleo golden mylk banana bread and WOW is it incredible! It’s truly one of the best things I’ve ever baked and will definitely be making this one again! My kids and Josh were also soooo into this recipe!

This recipe is paleo, gluten-free, grain-free and dairy-free. It’s also naturally sweetened with just banana and a touch of honey. I used clean and simple ingredients for this recipe such as pasture-raised eggs, coconut oil, honey, vanilla extract, bananas, almond flour, cinnamon, baking soda, baking powder, sea salt and Organifi GOLD mix.

I am absolutely obsessed with the GOLD mix from Organifi as it’s made with the cleanest and highest quality ingredients. Reishi and turkey tail mushrooms are also known to help boost the immune system. Lemon balm and magnesium help to promote rejuvenating sleep. As you know, getting good, quality sleep is essential for a good immune system. Coconut milk is a healthy fat that helps our body absorb all these vitamins and nutrients.

Now more than ever a strong immune system is absolutely essential. All of these superfood ingredients truly help to support a healthy immune system in different ways. I love incorporating Organifi GOLD mix into my life daily not only because I love the flavor, but to help boost my immune system!!

I love stirring it into my tea, making lattes with it (simply blend the mix with warmed almond milk), blending it into smoothies (love it blended with almond milk, almond butter, flax and banana), in my oatmeal, chia pudding, energy bites and the list goes on!! I have so much fun getting creative with it!!

Golden Mylk Paleo Banana Bread

Ingredients

Scale
  • 2 pasture-raised eggs
  • 4 ripe bananas, mashed
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 2 cups almond flour
  • 2 scoops Organifi Gold mix
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp pink salt

Instructions

  1. Preheat oven to 350F.
  2. Line a loaf pan with parchment paper.
  3. Combine the wet ingredients (eggs, banana, coconut oil, honey & vanilla extract) in a large bowl and mix well.
  4. Combine the dry ingredients (almond flour, gold mix, cinnamon, baking soda, baking powder and salt) in a separate bowl and mix well.
  5. Pour the dry ingredients into the wet ingredients and mix until combined.
  6. Pour into the loaf pan and place in the oven.
  7. Bake for 50 – 60 minutes (mine was perfect after 55 minutes), but oven times will vary and times will also vary based on your loaf pan.
  8. Remove from the oven and allow to cool for at least a half hour prior to slicing and enjoying.

Notes

Keep stored in the refrigerator for up to 5 days, or freeze to enjoy at a later date.
