The month of December always gets me in the mood to bake. I have especially been wanting to bake cookies!! These molasses cookies are so festive for this time of year and are perfect to bring to any holiday party or make for friends. I love making a big batch of them and sharing them with my family and friends.
These cookies are flourless and grain-free. They are also free of butter and refined sugar. They are some of the healthiest cookies you will find, but taste just as delicious as a traditional gingersnap cookie! They also don’t require too many ingredients and are quite simple to make.
These cookies contain molasses which makes them perfectly chewy. They have the perfect texture and consistency if you ask me! I love cookies that are slightly soft on the inside (which these are). Molasses is also packed with vitamins and minerals such as calcium, iron, magnesium, Vitamin B6 and selenium. It’s also known to combat stress and promote healthy skin.
For every recipe that I create I am very selective about which ingredients I use – and choosing the right egg is no exception!! This cookie recipe calls for one egg and I decided to use Pete and Gerry’s organic eggs. Flourless Cinnamon Molasses Cookies
- Yield: 12 cookies 1x
- Category: Dessert
- 1/2 cup coconut oil (melted) or this baking oil blend
- 1 egg (I used Pete & Gerry’s)
- 1/4 cup molasses
- 1 cup organic coconut sugar
- 1 1/2 cups almond flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ginger
- 1/2 tsp pumpkin pie spice
- pinch of pink sea salt
- Combine all wet ingredients in a bowl and mix until well-combined. I recommend using a stand mixer.
- Add the dry ingredients to the wet ingredients and mix again until well combined.
- Cover the bowl and place in the fridge for at least 12 hours.
- When ready to bake, preheat oven to 350F.
- Scoop 1 heaping tbsp of batter onto a parchment-lined baking sheet, using your fingers to slightly flatten.
- Bake for 10 minutes. Remove from oven and allow to cool completely before serving.
The dough needs to be made at least 12 hours in advance.
