Flourless Cinnamon Molasses Cookies (Paleo)

The month of December always gets me in the mood to bake. I have especially been wanting to bake cookies!! These molasses cookies are so festive for this time of year and are perfect to bring to any holiday party or make for friends. I love making a big batch of them and sharing them with my family and friends.

These cookies are flourless and grain-free. They are also free of butter and refined sugar. They are some of the healthiest cookies you will find, but taste just as delicious as a traditional gingersnap cookie! They also don’t require too many ingredients and are quite simple to make.

These cookies contain molasses which makes them perfectly chewy. They have the perfect texture and consistency if you ask me! I love cookies that are slightly soft on the inside (which these are). Molasses is also packed with vitamins and minerals such as calcium, iron, magnesium, Vitamin B6 and selenium. It’s also known to combat stress and promote healthy skin.

For every recipe that I create I am very selective about which ingredients I use – and choosing the right egg is no exception!! This cookie recipe calls for one egg and I decided to use Pete and Gerry’s organic eggs. If you’re not already familiar with the brand, they have been in business since the late 1800’s, sourcing their eggs sustainably from small family farms and all of their farmers follow the strictest standards of humane animal treatment, safety, and environmental sustainability. Their hens have a safe, comfortable place to live a happy, healthy life with ready access to grass and dirt and the space for them to engage in natural behaviors like roosting, dust bathing, scratching and other social interactions. Pete and Gerry’s is also the country’s first Certified Humane Free Range egg producer. All of their USDA Certified Organic Eggs are produced without antibiotics, hormones, pesticides, GMOs or animal byproducts. That means the best tasting, safest food for my family. I love that their eggs are organic and feel good about using them in my recipes!
