I can’t believe I’m sitting here typing the words that my baby is turning one…

I know it seems cliche when people say it goes by so fast, but it REALLY does! It seems like just yesterday that Emma was born and I was holding her in my arms for the first time. The first words out of my mouth were, “she’s so pretty, I love her so much”. Little did I know how much that love would grow.

The past year has been filled with so much joy. I love watching her little personality blossom and it gives me so much happiness watching her discover things for the first time.

We celebrated her first birthday this past weekend and I’d love to share the details from her party:

We had the party at Chalk in Delray Beach, Florida. It is a cute indoor play gym that toddlers love! The theme was ‘Farmer’s Market’ so I served lots of fresh fruits and veggies. We invited all of Emma’s best friends and family. I also had a few of my best friends there. I am so lucky that I made so many good friends in my ‘mommy and me’ class this past year. I truly feel blessed that I met such an amazing group of ladies. It’s so nice to have people to talk to who are going through the same thing as you (and who don’t think talking about poop is gross – any mama’s you know what I’m talking about)!

It was almost impossible to get Emma to look at the camera, but here is one of her enjoying the party in her fancy little dress:

For the favors we gave out these cute little animal sippers

We had someone come sing to the kids which everyone really loved! It’s so fascinating to see a group of toddlers so focused. Yes – now I’m that cheesy mom who sings along merrily to all those toddler songs like ‘the wheels on the bus’!!!

Now let’s discuss the food… because as we all know that’s most important…

I gave out Upon a Farm pouches to all the little ones – they were a HUGE hit! I love these pouches for Emma because they are fresh, cold-pressed, organic and non-gmo. They contain no preservatives and nothing artificial.

I had a custom cake from Two Fat Cookies in Delray Beach. The cake was a HUGE hit and if you’re local I highly recommend getting your cake from here! It was vanilla cake with oreo filling and vanilla frosting – SOO good!

I made Emma her smash cake since she’s allergic to eggs  (which are in most cakes that aren’t vegan). I was nervous that the cake wouldn’t come out great without using egg, but I was very pleasantly surprised – it was delicious! I used Simple Mills organic vanilla frosting because it’s one of the healthiest frostings on the market with all real ingredients. I was going to make my own frosting, but things got really hectic and busy the week leading up to her party, so this was a much easier option!

Here is the recipe for the smash cake and these are the ingredients I used:

Healthy Allergen-Free Smash Cake

    Ingredients

    Scale
    • 4 ripe bananas (mashed)
    • 1/2 cup unsweetened applesauce
    • 3 tbsp baking oil blend
    • 2 tsp vanilla extract
    • 1 tsp baking soda
    • 3/4 cup coconut flour
    • 3/4 cup oat flour (oats ground into flour)
    • 1 tsp cinnamon

    Instructions

    1. Preheat oven to 375F.
    2. In a large bowl, combine the coconut flour, oat flour, baking soda and cinnamon.
    3. In a separate bowl combine the mashed bananas, applesauce, oil and vanilla extract.
    4. Lightly grease a 9 inch cake pan with coconut oil and spread the batter into the pan.
    5. Bake for approximately 30 minutes, or until a toothpick comes out clean.
    6. Remove the cake from the oven and frost the cake. I used Simple Mills organic vanilla frosting and natural sprinkles
