This double chocolate mug cake is RIDICULOUSLY GOOD! It tastes like a rich molten chocolate lava cake! This is even more amazing with a scoop of vanilla ice cream on top (use dairy-free if vegan). It’s super quick and easy to make! I’m all about quick, easy and satisfying recipes!

This chocolate mug cake is naturally sweetened with just maple syrup – love desserts with no refined sugar! This recipe is also VEGAN, DAIRY-FREE, EGG-FREE, GLUTEN-FREE, GRAIN-FREE AND PALEO! Basically anyone can enjoy this rich and delicious dessert 🙂 The flour used for this is finely blanched almond flour, which keeps it super light and fluffy.

I love how simple and EASY this mug cake is to make!! It’s made in ONE mug (no other bowls used) and requires a few minimal clean and simple ingredients that you probably already have in your pantry. This entire recipe takes under 5 minutes to make from start to finish! This cake is cooked in the microwave in just over one minute! Love when things are this simple and easy!!

Ingredients needed for this mug cake:

  • Almond milk. You can use any milk you want, but if you’re keeping it vegan, use a non-dairy milk.
  • Coconut oil: Make sure the oil is in liquid form, or quickly melt coconut oil in the microwave for a few seconds. This step is really important and this recipe will not work if the oil is not liquid.
  • Maple syrup: the natural sweetener used in this recipe. You can substitute with honey, but then this recipe technically won’t be vegan.
  • Finely blanched almond flour: I highly recommend using fine almond flour, otherwise this cake will have a more grainy consistency which you don’t want. Trust me and buy the one that I linked to!
  • Cacao powder: The most important ingredient! This is what makes the cake a delicious chocolate flavor!
  • Baking powder: This helps the cake rise a bit while cooking in the microwave
  • Salt: Makes this mug cake extra flavorful!
  • Chocolate chips: Don’t mix this in with the batter! Sprinkle these on top after everything is mixed together and before placing in the microwave. You can also use a chopped up chocolate bar. If strict vegan or dairy-free make sure you’re chocolate is dairy-free.

How to make this mug cake:

  1. In a large microwavable mug add in the wet ingredients (almond milk, coconut oil and maple syrup), stirring together.
  2. Next add in the dry ingredients (everything except the chocolate chips), mixing until well combined.
  3. Sprinkle the chocolate chips on top.
  4. Place the mug in the microwave for 1 minute and 15 seconds.
  5. Remove, let cool for a few minutes and enjoy!
