I definitely hopped on the kale bandwagon a few years ago and am not looking to get off. I love kale – in salads, juices, smoothies, baked, sauteed – you name it! However, I’ve been frustrated when attempting to make a kale salad because it ends up tasting dry and chewy – not like what I experience in restaurants. I couldn’t figure out the trick to making my kale taste better! After some research, I concluded that you need to actually massage your kale in order to soften it and bring out the flavor. Massaging the kale also helps to aid digestion and doesn’t leave the kale tasting bitter. I had no idea what a huge difference massaging the kale does for the texture. Lesson learned people – massage your kale for a few minutes for soft and flavorful kale! Side note – I’m laughing that these are the topics I now find relevant in my life – massaging kale 🙂
I was so impressed with how this kale salad turned out that it has become a staple in my home. I add a veggie burger or grilled chicken on top to make it a meal or I simply have it as an appetizer or side dish. Not only are you getting a healthy dose of vitamins and greens from the kale, but many of the ingredients in this salad are nutritional powerhouses such as the turmeric, hemp seeds, pine nuts, lemon and olive oil. Detoxifying Vegan Kale Salad
A light and cleansing vegan kale salad packed with superfoods.
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 2 servings 1x

- 4 cups of kale
- 2 tbsp organic olive oil
- Squeeze of fresh lemon (about 1/4 – 1/2 of a lemon)
- 2 tbsp hemp seeds
- 3 tbsp pine nuts
- 2 tbsp nutritional yeast flakes
- 1 tsp red chili flakes
- 1 tsp turmeric
- pinch of pink sea salt
- pinch of black pepper
- Wash the kale and pat dry. Shred the kale into smaller pieces.
- Add the kale, olive oil and lemon to a large bowl and massage with your hands until the kale leaves soften. The kale should drastically shrink after a minute or two of the massaging process.
- Add all other ingredients and mix well to combine.
This will stay good in the refrigerator for up to 2 days, but is best served immediately.
