I love fall so much partly because I am making all the PUMPKIN RECIPES possible! These chocolate chip pumpkin cookies are so damn good! They’re easy to make and use simple clean ingredients. I love that these cookies are naturally sweetened with just banana and honey. They’re also gluten-free (make sure you use a certified gluten-free oat flour) and are dairy-free. You can even say that you’re eating a vegetable because there’s pumpkin in them 🙂

Trust me, you’re going to want a freshly baked plate of these chocolate chip pumpkin cookies out on your counter all of October!

These cookies are:

  • soft
  • delicious
  • gluten-free
  • dairy-free
  • refined sugar free

Ingredients needed for these pumpkin cookies:

  • egg: I love using organic pasture-raised eggs. The egg helps to bind the ingredients together.
  • pumpkin puree: of course you need pumpkin in a pumpkin recipe! make sure to use pumpkin puree and the only ingredient should be pumpkin – NOT pumpkin pie filling!
  • banana: naturally sweetens this recipe and makes the cookies moist.
  • honey: naturally sweetens this recipe.
  • coconut oil: makes the cookies moist and helps bind them together.
  • vanilla extract: for delicious flavor
  • oat flour: The only flour used in this recipe. If strict gluten-free make sure your oat flour is certified gluten-free like the one I linked to here.
  • cinnamon: for a warming spice and delicious flavor
  • pumpkin pie spice: gives these cookies that delicious pumpkin pie flavor and smell.
  • baking powder: to help these cookies rise and spread while baking.
  • salt: so necessary for added flavor in any baking recipe!
  • chocolate chips: the star of this recipe, haha. Make sure your chocolate chips are dairy-free if necessary, like the ones that I linked to.

How to make these chocolate chip pumpkin cookies:

  • Preheat oven to 350℉
  • In a large mixing bowl, whisk together the egg, pumpkin puree, mashed banana, honey, melted coconut oil and vanilla extract.
  • In a separate large bowl, combine the oat flour, cinnamon, pumpkin pie spice, salt, and baking powder. Mix together and then pour into the bowl with the wet ingredients.
  • Pour wet ingredients into the bowl with the dry ingredients and mix until everything is combined and it has a cookie dough-like consistency.
  • Fold in the chocolate chips.
  • Using a heaping tablespoon or small cookie scoop, scoop the dough onto an ungreased cookie sheet, leaving room in between each cookie.
  • Place in the oven and bake for 15 minutes.
  • Remove from the oven and allow to cool for at least 20 minutes, then remove the cookies with a spatula and enjoy!
