This delicious vegan & gluten-free baked chocolate chip skillet pancake is free from common allergens and would make the most delicious Mother’s Day breakfast!
CHOCOLATE CHIP PANCAKES… seriously is there anything better?! I’ve recreated this childhood favorite using healthy and allergen-free ingredients. Chocolate chip pancakes are amazing ‘as is’, however, I put an extra delicious spin on these pancakes by baking them in a skillet making it one, huge chocolate pancake skillet! I suggest having everyone just dig in with a fork, or you can be civilized and cut it into 6 slices (almost like a pancake pie)!
Allergen-free foods were honestly something I never put much thought into my entire life. However, that all changed as soon as I found out that my daughter, Emma, is allergic to eggs, peanuts and tree nuts. I love being able to share my food with her, so looking into allergen-free foods has become a focus of mine. Most healthy pancake recipes use egg and/or nut flours, so I was thrilled when I discovered Enjoy Life Foods ALLERGEN-FREE pancake and waffle mix!
These pancakes are made using the Enjoy Life Foods vegan and gluten-free pancake mix. I love this mix because it’s free from the “top eight” allergens: wheat/gluten, dairy, peanuts, tree nuts, egg, soy, fish and shellfish. I also love that this pancake and waffle mix is free of casein, potato and sulfites. Added bonus: this mix is high in protein and has probiotics!
So many people believe just because a product is gluten-free it’s ‘healthy’. This is far from the truth, as so many gluten-free flours and mixes are made with unhealthy ingredients, or worse, artificial flavorings which doesn’t make them the most nutritious choice. You have to do your research and read all ingredients carefully to ensure the substitutes that companies are using for gluten, dairy, eggs etc are REAL and healthy ingredients. Another important thing to look out for is GMO’s (genetically modified organisms) – none of Enjoy Life Foods products contain GMO’s which is really important to me. Enjoy Life Foods products have no artificial ingredients and instead contain delicious, natural ingredients like quinoa, buckwheat and honey.
I also used Enjoy Life Foods dark chocolate chips for this recipe, which are also free of common allergens and taste delicious. I’ve been using these chocolate chips for mostly all of my recipes that call for chocolate chips as an ingredient.
With Mother’s Day quickly approaching I’m of course thinking of nice things I can do for my mom. I’m pretty positive that if I make her this chocolate chip pancake skillet bake she’d be the happiest person. I know a lot of people take their mother’s to brunch to celebrate Mother’s Day, but restaurants are always over-crowded on this holiday so sometimes it’s nice to just have a low-key morning at home and make a yummy homemade breakfast. Now that I’m a mama (celebrating my second Mother’s Day this year) I know I’d love if my husband baked me this delicious chocolate chip skillet pancake (hint hint Josh).

Allergen-Free Baked Chocolate Chip Pancake Skillet
This delicious vegan & gluten-free baked chocolate chip skillet pancake is free from common allergens.

- Cook Time: 22 minutes

1 1/2 cups Enjoy Life Foods pancake mix
2 tbsp + 1 tsp coconut oil, melted and cooled
1 1/2 cups water
- Preheat oven to 350F.
- Combine the pancake mix, oil and water in large bowl, stirring vigorously with a whisk until powder is just combined and no lumps remain (approximately 10 – 15 stirs)
- Fold in the chocolate chips and mix again.
- Lightly grease a cast-iron skillet with coconut oil and pour the batter into the skillet and sprinkle a few more chocolate chips on top.
- Place in the oven and bake for 22 minutes, or until pancake is baked through.
- Remove from oven and allow to cool for five minutes in the skillet. Cut into four slices and serve with maple syrup and banana.
