Let’s be honest. I am a sucker for desserts. I love cold sweets on a hot afternoon, a heartwarming cuppa hot chocolate on a chilly night, and I will always say yes to cake any day. 

At Leah’s Plate, I believe in two words: health and happiness. Desserts are both of those for me! My healthy dessert recipes will teach you how to choose alternative ingredients that are low-calorie and easy to digest. 

If you need a healthy dessert idea that’s quick, try these naturally sweetened apple nachos. You get the vitamins, fiber, proteins, and healthy fats from just a few ingredients. I make them all the time for my daughters after school.

Another healthy, light dessert is this 5-minute paleo pumpkin pudding that is hassle-free, gluten-free, and vegan-friendly. I can happily indulge in this and know that I’m still feeding my body only nutritious, wholesome ingredients!  

With these sweet treats, I always go for seconds because I know that they’re clean and packed with nutrients. I’m beyond obsessed with these vegan and gluten-free s’mores brownies! They’re so decadent and filling, with super low sugar content that won’t make a mark on your waistline. 

Cheat day will never be the same again with these delicious (and healthy) desserts.

My fave go-to simple side salad! Love serving this My fave go-to simple side salad! Love serving this alongside any meal when I want to pack some greens in. Goes v well with wild salmon & avocado or served with pasta!

Handful arugula 
Drizzle of olive oil (a good cold-pressed organic one)
Drizzle of balsamic vinegar
Freshly grated Parmesan 
Pinch of pink salt & pepper

So simple, so easy, and so good!
Blueberry pie baked oatmeal // always a comforting Blueberry pie baked oatmeal // always a comforting favorite of mine. 

Preheat oven to 350F. In a bowl combine 1/2 cup old fashioned oats, pinch of cinnamon, 2/3 cup almond milk, & 1/2 mashed banana. Mix well, then mix in a handful of blueberries (fresh or frozen). 
Pour into a lightly greased ramekin and add a few more blueberries on top. Place in the oven. Bake for 25 min. Remove from oven and spoon into a bowl. Enjoy! I love adding in a spoonful of almond butter too!
