Whether it’s a quick bite or an elaborate spread for guests, dinner can be incredibly fun to prepare, especially when you're constantly experimenting and trying new recipes! It’s an added bonus when you can take a bite and indulge in the food knowing that it’s healthy and nourishing.

When it’s time for dinner, I aim to keep the recipes light - low-carb, whole food, and nutritious. All while maintaining the flavors and a variety of textures to keep it interesting! 

These easy healthy dinner recipes are great whether you’re cooking for one or a family. A few ingredients and 30 minutes are all you need. These taco meat stuffed peppers are the best, and they’re kid-friendly!

My go-to healthy dinner recipe these days is a simple vegan coconut curry. Indian and Thai cuisines have such strong and spicy flavors, but they’re also so heartwarming and satisfying! I make mine with lots of vegetables and coconut milk. Trust me - after you have a go at this recipe, you won’t need to order takeout curries again.

You’ll also find seasonal dinner ideas, like this pumpkin seed pesto bowl that is perfect for the cozy autumn season. My family loves digging into this bowl - it’s veggie-packed and extremely delicious!

My fave go-to simple side salad! Love serving this My fave go-to simple side salad! Love serving this alongside any meal when I want to pack some greens in. Goes v well with wild salmon & avocado or served with pasta!

Handful arugula 
Drizzle of olive oil (a good cold-pressed organic one)
Drizzle of balsamic vinegar
Freshly grated Parmesan 
Pinch of pink salt & pepper

So simple, so easy, and so good!
Blueberry pie baked oatmeal // always a comforting Blueberry pie baked oatmeal // always a comforting favorite of mine. 

Preheat oven to 350F. In a bowl combine 1/2 cup old fashioned oats, pinch of cinnamon, 2/3 cup almond milk, & 1/2 mashed banana. Mix well, then mix in a handful of blueberries (fresh or frozen). 
Pour into a lightly greased ramekin and add a few more blueberries on top. Place in the oven. Bake for 25 min. Remove from oven and spoon into a bowl. Enjoy! I love adding in a spoonful of almond butter too!
