These healthy pancakes are gluten free, grain free, dairy free and refined sugar free. However, they are not lacking in taste! The apple and oatmeal combination is the perfect breakfast treat! There are very few ingredients used, making this a simple and easy pancake recipe to whip up.

Ingredients

Scale
  • 1 cup + 1 tbsp Purely Elizabeth Apple Cinnamon Pecan Ancient Grain Oatmeal
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/2 cup vanilla almond milk
  • 1 tbsp coconut oil (melted)
  • 1/2 tsp vanilla extract

Instructions

  1. Process the oatmeal in a food process to create a flour-like consistency
  2. Combine the oatmeal, baking powder and cinnamon into a bowl
  3. In a separate bowl, whisk the egg, then add in almond milk, coconut oil and vanilla extract
  4. Add the wet ingredients into the bowl of the dry ingredients
  5. Heat a skillet with coconut oil or nonstick cooking spray
  6. Place the batter onto the pan and cook on one side until the top starts to bubble
  7. Flip the pancakes and cook for an additional 3 minutes, or until both sides are lightly browned.
  8. Place the cooked pancakes onto a plate and top with walnuts, sautéed apples and shredded coconut, then drizzle with maple syrup

Drizzle of olive oil (a good cold-pressed organic one)
Drizzle of balsamic vinegar
Freshly grated Parmesan 
Pinch of pink salt & pepper

So simple, so easy, and so good!
