I’m such a creature of habit so for the past few years my breakfast has often been a smoothie, oatmeal, pancakes or a yogurt bowl. I was feeling extra creative one day and wanted to create something FUN, new and exciting. This recipe was made somewhat randomly and turned out to be one of my favorite things I’ve ever made. I struggled to think of a name for this recipe and ultimately settled on ‘4 layer breakfast fruit pie’.

Mornings are often really hectic in my house now that Emma is in preschool. It’s a rush to get her out the door (and my biggest priority is making sure she eats a healthy and nutritious breakfast to fuel her for the day). I also ensure that my husband and I eat something nutritious as well. This breakfast fruit pie has been coming in handy on weekdays when we need a fast, tasty and nutritious meal for the entire family. It also makes me feel like a good wife knowing my husband enjoyed a home-cooked healthy breakfast as well before he heads off to work. Not only is it healthy and nutritious, but it’s also absolutely delicious!

This healthy breakfast fruit pie has become a breakfast favorite and staple in my house. It’s so tasty, satisfying and keeps me full until lunchtime. One piece really fills me up, however I often reach for a second piece because it’s that good 🙂

This breakfast fruit pie is made by layering tortillas (I use One Degree Organics Sprouted Heritage Whole Grain Tortillas), yogurt (use coconut yogurt if vegan), almond butter, banana and blueberries (but feel free to use any fruit or nut butter you desire). All of the ingredients are clean and nutritious. The blueberries are high in antioxidants, potassium from the banana, healthy fat from the nut butter and calcium from the yogurt. The sprouted wheat tortillas provide healthy carbs to fuel me for the day ahead.

Now back to this incredible breakfast fruit pie! You can really get creative with what you choose to put in the ‘pie’, but my layers went like this:

Layer 1: tortilla spread with yogurt and blueberries

Layer 2: tortilla spread with almond butter and banana

Layer 3: tortilla spread with yogurt and blueberries

Layer 4 (topping): tortilla spread with yogurt, warmed blueberries, a drizzle of cashew butter, hemp seeds and bee pollen for an extra nutritional boost.

The filling needs to chill for several hours in order to really set, so I recommend preparing this recipe the day before you want to serve the breakfast pie. Keep the finished dish in the fridge (covered) overnight and in the morning you have a perfectly healthy and nutritious breakfast ready to eat!

Layer 2: tortilla spread with 3 tbsp almond butter and 1/2 banana

Layer 3: tortilla spread with 3 tbsp yogurt and 1/4 cup blueberries

Layer 4 (topping): tortilla spread with 3 tbsp yogurt, 1/4 cup warmed blueberries, a drizzle of cashew butter, hemp seeds and bee pollen for an extra nutritional boost.
