Sea Salt Popcorn Sundae
I was recently lucky enough to have Pipcorn send me some samples of their all-natural, healthy popcorn. Their popcorn is vegan, gluten-free and non-gmo. I was able to sample three of their flavors: sea salt, truffle and kettle. I loved all of the flavors and have been snacking non-stop since receiving them. Last night I was craving an ice cream sundae, but wanted something that is consistant with my healthy eating. I started rummaging through my kitchen to see what I had on hand. I was happy to find that I still had some coconut milk ice cream in my freezer (luckily my husband isn’t into non-dairy ice cream, so my stash lasts longer). I added the sea salt popcorn and a homemade healthy caramel sauce as my toppings. The combination of the vanilla coconut milk ice cream, sea salt popcorn and caramel sauce was a dessert lovers dream.

- Prep Time: 5 minutes
Ingredients
- 1/2 cup of vanilla coconut milk ice cream (I buy the brand Coconut Bliss)
- Handful of sea salt Pipcorn
- 1 tbsp tahini
- 1 tbsp maple syrup
Instructions
- Scoop the ice cream into your ice cream dish.
- Add a handful of Pipcorn
- To make the caramel sauce: add the tahini and maple syrup in a small dish and stir until well combined in a sauce-like consistency. If it is too thick add a tiny bit of water to thin it out.
- Drizzle the caramel sauce over the ice cream and popcorn.
