I feel cliche saying this, put all I want to do is create recipes using pumpkin this season! I love Autumn so much and one of the reasons is because pumpkin recipes are my favorite! I’ve always loved pumpkin ice cream, so decided to make a healthy version that requires minimal ingredients and is made without any dairy or gluten and is free of refined sugar. This recipe is vegan and paleo so all can enjoy!
The ingredients used to make this ‘ice cream’ are pumpkin puree, banana, cinnamon, pumpkin pie spice, vanilla extract and almond milk. I added a drizzle of almond butter on top, but that is optional. This recipe is so easy to make – you simply add the ingredients into a food processor and process until smooth and creamy! The best part about this is it’s ready in under 5 minutes! I recommend eating this as soon as it’s ready, otherwise it’ll melt quickly. You can store it in the freezer, but be sure to allow about 10 – 15 minutes for it to defrost prior to eating it.
Let’s discuss the health benefits of pumpkin: they are packed with fiber, potassium and Vitamin A (which aids vision). Pumpkin can also help to lower bad cholesterol.
