These healthy taco meat stuffed peppers are an easy and healthy gluten-free weeknight meal and can be enjoyed as leftovers the next day! They can easily be made Whole30 and paleo if you just omit the cheese.

I’m all about HEALTHY and EASY weeknight meals! I definitely do not have time to spend over 30 minutes in the kitchen cooking dinner for my family. I’m all about those UNDER 30 minute meals!! I’m also all for meals that the entire family can enjoy! Josh and I love these taco meat stuffed bell peppers SO much that we’ve been having them one night per week! The kids eat the same meal as us, but not the bell peppers. I serve the kids the ground taco meat with a side of Siete chips and guacamole (I make a very mild guacamole so it’s not spicy for them). The days are done of serving the kids separate meals – I’m doing everything in my powder to make meals that we can all enjoy!

This meal is simple and easy to make! These taco meat stuffed peppers are gluten-free and grain-free! You can also easily make this meal Whole30, paleo and dairy-free by simply omitting the cheese. You definitely don’t need the cheese. However, if you can eat dairy then I highly suggest the melted cheese on top 🙂

To make this meal kid friendly:

Serve the taco meat without the bell pepper! My kids enjoy it with some chips and guacamole (not spicy) on the side!

Here are the simple ingredients needed:
  • 5 bell peppers: Slice them in half lengthwise and remove the seeds. I used orange and red bell peppers, but use any color that you like!
  • 1 tablespoon olive oil: for lightly brushing the bell peppers with before they go in the oven and for cooking the meat on the frying pan.
  • 1/2 cup onion: dice the onion. This gives the meat so much flavor!
  • 1 garlic clove: mince / dice the garlic clove. This also gives the meat flavor.
  • 1 pound organic ground chicken, turkey or beef. I used ground turkey, but feel free to use whatever you like!
  • 1 tbsp taco spice blend (or if making a homemade blend I use: chili powder, cumin, smoked paprika, garlic powder, salt & pepper)
  • 1/4 cup bone broth (I love Bonafide Provisions, which is found in the frozen aisle at Whole Foods and Fresh Market).
  • Freshly grated shredded cheddar (or Mexican cheese blend). I buy organic, grass-fed raw cheddar and use my cheese grater to freshly grate it. This is a game changer and highly suggest this over pre-shredded packaged cheese!
  • Guacamole: for serving. I scoop a spoonful onto each bell pepper after it comes out of the oven.
  • Salsa: also for serving. I spoon a bit on top of each bell pepper.
  • Fresh cilantro: for serving. Sprinkle some on top of the bell peppers.

This ingredient isn’t NEEDED, but I highly recommend enjoying this meal with some chips on the side! My favorite is Siete chips!

Ingredients

  • 5 bell peppers (slice in half lengthwise and remove the seeds)
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 1 garlic clove, minced
  • 1 pound organic ground chicken, turkey or beef 
  • 1 tbsp taco spice blend (or if making a homemade blend I use: chili powder, cumin, smoked paprika, garlic powder, salt & pepper)
  • 1/4 cup bone broth
  • Freshly grated shredded cheddar (or Mexican cheese blend)
  • Guacamole 
  • Salsa
  • Fresh cilantro 

Instructions

  1. Preheat oven to 400F.
  2. Place the bell peppers on a large baking sheet very lightly brush each side with olive oil and a pinch of salt. Place in the oven and bake for 15 minutes.
  3. While the bell peppers are roasting in the oven, cook the meat on the stove: heat up a large frying pan with 1 tbsp of olive oil and then add the onion and garlic, cooking for about 5 minutes.
  4. Next add the meat to the frying pan, breaking it up into small pieces as it cooks.
  5. Once the meat is almost browned add your taco spice blend and mix well.
  6. Once the meat is fully browned add in the bone broth and cook for another 5 minutes over low heat, until the broth is absorbed. This makes the meat moist and flavorful!
  7. Remove the bell peppers from the oven and spoon the taco meat into each bell pepper. Sprinkle some cheese over the top of the meat and place back in the oven for 10 minutes.
  8. Remove from the oven and serve with fresh cilantro, guacamole and salsa. I love to enjoy this with some chips on the side!
