Here we are – the first day of August. We’re deep into summertime and it’s HOT here in South Florida as you can imagine. I used to LOVE summer because I grew up in the northeast. I welcomed each and every day of summer with open arms. I cherished every moment of those long, sunny days spent at the pool or beach followed by grilling an early dinner outside. However, things have changed… I moved to South Florida about 5 years ago and now summer is my least favorite season. It’s almost 100 degrees every single day and it’s so humid that my sunglasses get so fogged up when I walk outside that I can’t even see – it literally feels like I stepped into a sauna. It’s too hot to enjoy parks or even the beach. I want to be optimistic though and embrace summertime. Since I don’t want to embrace summer outdoors, I’m doing little things to embrace it indoors 🙂

One of my favorite summertime activities growing up was going to get ice cream with my mom and dad. We would order a huge banana split and all share it. This brings back wonderful memories and just screams SUMMERTIME HAPPINESS 🙂 I recreated this favorite dessert with a healthy version that you can enjoy for breakfast!! You can of course also have it as a dessert, but since it’s made with mostly ‘breakfast foods’ I prefer to enjoy it in the morning 🙂

This breakfast banana split is made with 5 simple ingredients: banana, yogurt, granola, peanut butter and chocolate sauce. I try to find the healthiest options for each and every ingredient. For the yogurt I love Siggi’s and if you want a good vegan option try to find a coconut milk based yogurt that has minimal and clean ingredients. You can definitely use a store-bought chocolate sauce, but I like to melt a chocolate bar and drizzle it on top. Here is the granola, peanut butter and chocolate that I recommend:

This recipe is gluten-free if you use certified gluten-free granola and it’s vegan as long as you opt for a vegan yogurt – I enjoy coconut yogurt! Go make this for breakfast or dessert and embrace those summertime vibes!

Healthy Breakfast Banana Split

Ingredients

  • 1 banana
  • 1/2 cup yogurt (non-dairy yogurt if you’re vegan)
  • 12 tbsp granola (I use gluten-free granola)
  • 1 tbsp creamy peanut butter
  • 1 dark chocolate bar, melted into a sauce 

Instructions

  1. Cut the banana in half lengthwise and place on a plate.
  2. Spoon the yogurt on top of the banana.
  3. Sprinkle the granola over the yogurt and banana.
  4. Drizzle the peanut butter and chocolate on top.
  5. I also added some chocolate chips on top 🙂

Notes

I melted this dark chocolate bar over the stovetop in a small pot for just a few minutes over low heat. You can also buy chocolate syrup, but I like melting the chocolate bar because the ingredients are so clean!
